White sauce is frequently used in continental cuisine. Here is a low calorie version of white sauce that you would never have imagined in your wildest dreams! try using this in recipes such as aubergine au gratin and you will realise it tastes just the same as the original.

Ingredients

Method
  1. Combine the cauliflower with 2 cups of water in a deep non-stick pan and simmer till the cauliflower softens.
  2. When cool, blend in a mixer till smooth. Strain and keep aside.
  3. Heat the butter in a non-stick pan, add the maida and saute on a medium flame for few seconds.
  4. Add the milk and cauliflower purée and bring to boil.
  5. Simmer for 3 to 4 minutes or till it thickens.
  6. Add the salt and pepper, mix well and simmer for another 5 minutes.
  7. Keep aside and use as required.
