Leftover Burrito

A simple preparation of the famous Mexican burrito from leftover rice and chappatis. Serve with generous amount of taco sauce.
For salsa:- Finely chop onion and tomatoes. mix them together and add salt, pepper, finely chopped chillies, chopped cilantro and juice of lime and mix it well and keep aside.
Fajita onion and peppers.- In a pan add oil. once nice and hot add long chopped onions and green peppers and sprinkle with salt. now cook it on med-high flame until nice and golden in color. keep aside.
Burrito rice:- In another pan add some oil, once the oil is hot add taco seasoning and mix well. to this add the leftover rice, salt and mix well. keep aside.
Build burrito:- On a griddle warm the leftover chappati on both the sides. now on the warm chappati, put the seasoned rice, fajita onion and peppers, and generous amount of fresh made salsa and serve it as an healthy afternoon snack.
