A sumptuous dessert, made from broken wheat, that is light enough to be eaten after a heavy meal when you still crave for sugar. It will nourish you with energy, protein and iron.

Ingredients


1/2 cup broken wheat (dalia)
1/2 cup sugar
1/2 cup cardamom (elaichi) powder
2 tbsp almond (badam) slivers
3 tbsp warm milk
3 tbsp pure ghee

Method
  1. Heat the ghee in a pan and fry the broken wheat, stirring continuously till it is golden brown in colour.
  2. Meanwhile, heat 1½ cup of water in another pan till warm.
  3. Add the water to the broken wheat and increase the flame till the water comes to boil.
  4. Then reduce the flame and cook, stirring occasionally till the wheat is almost done.
  5. Add the sugar, cardamom powder and almonds and mix well.
  6. Cook on a slow flame till the ghee separates.
  7. Allow the lapsi to cool for some time.
  8. Before serving, add the milk and heat again.
  9. Serve hot.

Tips
  1. If the lapsi becomes dry while cooking, add some water or milk.
