Hits the right spot, every time! Anemia kills appetites and this soup is a nice new way to bring it right back.

  1. Wash the beans and soak in water overnight. Next day, drain thoroughly and keep aside.
  2. Heat the oil, add the onions and garlic and fry for 1 minute. Add 1½ cups tomatoes, chilli powder and salt and fry again for another minute.
  3. Add the beans and 6 cups of water and pressure cook till done.
  4. Cool to room temperature and blend in a blender to a smooth purée. Do not strain.
  5. Add the lemon juice, remaining ½ cup tomatoes, spring onions and capsicum and bring to a boil.
  6. Serve hot.
