Back home after an endless day at work and faced by a hungry family demanding to be fed as quickly as possible? Don’t panic! Here are a couple of easy-to-make recipes for filling one-dish meals that can be prepared in just a few minutes. You’ll have dinner on the table before your family has time to get up from in front of the television!
CORN METHI PULAO

A quick fix pulao that can be made in the pressure cooker in a jiffy!
Preparation time: 10 minutes
Cooking time: 15 minutes.
Makes 4 servings.
1 cup long grained rice (basmati)
2 to 4 black peppercorns (kalimirch)
12 mm. (½")cinnamon (dalchini)
2 cloves (laung / lavang)
2 cardamoms (elaichi)
½ tsp finely chopped green chillies
½ cup sliced onions
¾ cup finely chopped fenugreek (methi) leaves
½ cup sweet corn (makai ke dane)
¼ tsp turmeric powder (haldi)
1 tbsp butter
1 tbsp oil
Salt to taste
For serving
Fresh curds (dahi)
- Wash the rice and keep aside.
- Heat the butter and oil in a pressure cooker; add the peppercorns, cinnamon, cloves, cardamom and sauté on a medium flame for half a minute.
- Add the onions and sauté on a medium flame for 1 to 2 minutes.
- Add the fenugreek leaves and corn kernels, mix well and sauté on a medium flame for 1 minute.
- Add the rice and 2 cups of hot water, salt, turmeric powder and green chillies and sauté for a few seconds.
- Pressure cook for 2 whistles. Allow the steam to escape before opening the lid.
- Serve hot with fresh curds.
