Haldi ki Sabzi ia a traditional Rajasthani sabzi very popular when fresh turmeric is in season. Serve it hot with roti or rice.

While peeling the turmeric hands tend to get yellow, use gloves or a plastic bag while peeling and grating the turmeric.

Ingredients
250 gms fresh turmeric (amba halad) , peeled , washed and grated.
1 cup chopped cauliflower
1 cup green peas
2 red chillies
2 green chillies
1 inch piece ginger (adrak) , peeled and chopped
chopped coriander (dhania)
1 tsp chilli powder
coriander (dhania) powder
salt to taste
1 tsp cumin seeds (jeera)
a pinch of asafoetida (hing)
2 cups curds (dahi)
3/4 cup ghee
water as required
Method
    Method
  1. Combine chilli powder, coriander powder, salt and curds in a deep bowl and whip it. See that no lumps remain. Keep aside.
  2. Heat some ghee in a non-pan, add the the cauliflower and saute until it is soft, remove from the pan and keep it aside.
  3. In the same pan add the green peas and saute for another 3-4 minuttes. Remove from the pan and keep it aside.
  4. In the same pan add more ghee when it is hot add asafoetida and cumin seeds.
  5. When the seeds crackle add red and green chillies fry for a minute.
  6. Add the turmeric and saute until it becomes golden or dark in colour, while stirring continuously. (if not properly fried it will give bitter taste).
  7. Now add the curd mixture and ginger and cook till the ghee separates,while stirring continuously.
  8. Add some water and then add cooked cauliflower and green peas and cook for another 10 minutes.
  9. Serve hot garnished with coriander.

I think amba halad is mango ginger, quite commonly found in Bangalore. It is not kacchi haldi. I came here thinking this is a recipe I can use for the fresh haldi I have, but not sure.
