This salad is set apart by its extremely unusual dressing, which can be served separately or mixed inside. Ensure that you select ripe avocado as it is pulpy and has a unique flavour. This tangy salad also has an enticing crispness, thanks to the lettuce. Rich in iron, calcium and fibre, the careful combination of ingredients like apple, lettuce, rajma and corn makes this salad both interesting and wholesome.

Ingredients


For The Dressing
1 medium ripe avocado , peeled and roughly chopped
1 tomato , roughly chopped
2 tsp lemon juice
1 tsp oil
salt to taste

Other Ingredients
1 cup lettuce , torn into pieces
1 cup chopped apples
1/2 tsp lemon juice
1/2 cup soaked and cooked rajma (kidney beans)
1/4 cup cooked sweet corn kernels (makai ke dane)
1/4 cup chopped spring onion greens

Method
For the dressing

  1. Combine all the ingredients in a bowl and mash gently with the back of a spoon. Keep aside.

How to proceed

  1. Put the lettuce in a vessel full of ice-cold water for half an hour. This will make them crisp.
  2. Drain, wrap in a muslin cloth and refrigerate till ready to use.
  3. Toss the apples in the lemon juice and keep refrigerated.
  4. Just before serving, combine all the ingredients together in a bowl, add the dressing and toss well.
  5. Serve immediately.
