Ingredients

3 to 4 banana leaves (kele ka patta)
1 tsp oil for greasing
1/3 cup rice flour (chawal ka atta)
1 tbsp urad dal (split black lentils)
1 tsp curds (dahi)
2 1/2 tsp finely chopped green chillies
1/4 cup green peas , coarsely ground
2 tbsp finely chopped coriander (dhania)
1/2 tsp cumin seeds (jeera) , roasted and coarsely ground
salt to taste
1/2 tsp fruit salt

For Serving
green chutney

Method
  1. Cut the banana leaves into circles using a 75 mm. (3") diameter cookie cutter.
  2. Apply a little oil on one side of each banana leaf and keep aside.
  3. Combine all the remaining ingredients, except the fruit salt, along with ¾ cup of water in a bowl and mix well to make a batter of pouring consistency. Keep aside.
  4. Just before serving, add the fruit salt and 2 tsp of water over it.
  5. When the bubbles form, mix gently.
  6. Put 2 tbsp of the batter on the greased side of a banana leaf and spread it evenly to make a thin layer.
  7. Cover with another banana leaf with the greased side over the batter.
  8. Place 5 such pankis at a time in a microwave-safe dish and microwave on high for 1 minute 20 seconds or till well cooked.
  9. Repeat the same procedure to make 5 more pankis in another batch.
  10. Serve immediately with green chutney.

Batter of rice flour, urad dal, green peas and green chillies placed between 2 banana leaves and steamed to perfection. Healthy and easy to make and very light to eat. Use as a appetizer or quick snack. Kids love it too.
