A delightful combination of garlic bread with clear soup in the Garlic bread soup recipe. Lightly fried or toasted bread slices are flavoured with garlic flakes and butter and served with a bowl of hot soup.

2 tbsp olive oil2 cups chopped onions
1/4 cup finely chopped garlic
1 bayleaf (tejpatta)Pinch of crushed red pepper
salt to taste2 quarts vegetable stock
2 cups diced day old French bread
1/2 cup heavy cream
1/2 cup grated Parmigiano-Reggiano Cheese
1 tablespoon finely chopped fresh parsley leaves
- In a large saucepan, over medium heat, add the olive oil.
- When the oil is hot, add the onions, garlic, crushed bay leaf, and crushed red pepper.
- Season with salt. saute until slightly caramelized, about 6 to 8 minutes.
- Stir in the stock.
- Bring the liquid up to a boil, then reduce to a simmer and simmer for 40 minutes. turn the heat up and whisk in
