Dhania ki subzi is a traditional maharashtrian preparation, which can used as an accompaniment or as a snack. It can be prepared very easily and quickly as it uses common ingredients like coriander and gram flour.

Makes 2 servings


Ingredients

2 cups chopped corriander (dhania)
1/4 cup besan (bengal gram flour)
1 tsp mustard seeds ( rai / sarson)
1/4 tsp turmeric powder (haldi)
1 tsp chilli powder
a pinch of asafoetida (hing)
1/2 tsp sugar
1 tbsp oil
salt to taste

Method
  1. Heat the oil in a kadhai, add the mustard seeds and fry till they crackle.
  2. Then add the turmeric powder, chilli powder and asafoetida and fry for some time.
  3. Finally, add the coriander, gram flour, sugar and salt and mix well.
  4. Stir till the gram flour is cooked.
  5. Serve hot.

Tips
  1. If you want to have this as a snack, cook for some more time till the coriander becomes crisp.
