My daughter loves pizzas and i make them at home. I try to make them healthier so this is an interesting version of pizza. It is a healthy snack which could be served at kids parties. A few changes can be made in the filling depending upon ones liking.

Ingredients

For The Pizza Base
2 cups plain flour (maida)
5 gms dry yeast
1 tsp sugar
1 tsp salt
2 tbsp olive oil

For The Filling
1/2 cup chopped onions
3/4 cup chopped tomatoes
1/4 cup sliced black olives
1/2 cup chopped capsicum
100 gms grated paneer (cottage cheese)
1 tsp dried oregano
2 tsp dry basil
1 tsp salt
1/2 tsp freshly ground black pepper powder
2 tbsp pizza sauce , readily available
100 gms mozzarella cheese , grated
100 gm cheese , grated
dried red chilli flakes for garnish
Method

  1. Take 2 tbsp of lukewarm water and add the dry yeast and sugar to it, mix well and keep aside for a few minutes or until the yeast completely dissolves.
  2. Take the flour in a bowl and add salt and the yeast mixture to it.
  3. Add enough water to make a soft ,elastic dough.
  4. Add the olive oil and knead the dough again.
  5. Cover it with a wet cloth and let it stand for 20 minutes.
  6. Once the dough rises press it gently and divide it into 18 equal parts.
  7. Roll out each part to a 7 cm round,prick a few holes with a fork.
  8. Now take a muffin tray and grease it with butter.
  9. Now gently press each round on the tray in the shape of a cup cake.
  10. Put it in a preheated oven for 8 minutes at 200 degree Celsius.
  11. Keep aside.

For the filling

  1. Combine all the ingredients together except for the mozzarella and regular cheese in a bowl and mix well.
  2. Put the filling into the baked cupcakes, top it with both the cheese and put it back into the oven for 5 minutes.
  3. Serve hot garnished with chilli flakes.
