Makes 8 crêpes

1/2 cup plain flour (maida)
1/2 cup cornflour
1/2 cup milk
a pinch of salt
1 tbsp melted butter
butter for greasing and cooking

  1. Combine the plain flour, cornflour, milk, ½ cup of water, salt and melted butter in a deep bowl and mix well using a whisk till no lumps remain.
  2. Heat a 150 mm. (6”) non-stick pan and brush it lightly with butter.
  3. Cool slightly, pour a ladleful of the mixture into the pan and tilt in a circular motion to make a 150 mm. (6”) round.
  4. Cook it, using a little butter, till light pink spots appear on both the sides
  5. Repeat with the remaining batter to make 7 more crêpes.
  6. Use as required
