Soft cottage cheese, tangy tomatoes and aromatic green chutney manifest as a heavenly combo in the cottage cheese, tomato and chutney sandwich. You can carry this versatile sandwich in your box, have it for breakfast or conjure it up to appease a sudden hunger pang.

4 whole wheat bread slices , lightly buttered
1/2 cup grated paneer (cottage cheese)
1/4 cup finely chopped tomatoes
4 tbsp green chutney
salt to taste

  1. Combine the cottage cheese, tomatoes and salt in a deep bowl and mix well.
  2. Place the bread slices on a clean, dry surface and apply 1 tbsp of green chutney on each bread slice.
  3. Put 1 portion of the stuffing on 2 bread slices and spread it evenly.
  4. Cover with the remaining 2 chutney bread slices and press lightly.
  5. Cut each sandwich into two and serve immediately.
