Corn, capsicum and cheese parathas, mexican spice meets indian zest in these whole wheat parathas made like quesadillas. The cheesy corn and capsicum stuffing makes a healthy treat just right with salsa or tomato ketchup.

Ingredients


To Be Mixed Together Into A Stuffing
1/2 cup sweet corn kernels (makai ke dane) , boiled and roughly chopped
1/4 cup finely chopped capsicum
1/4 cup grated processed cheese
1/2 tsp chilli powder
1/4 tsp black salt (sanchal)

For The Dough
3/4 cup whole wheat flour (gehun ka atta)
1 1/4 tsp oil
salt to taste

Other Ingredients
1/4 tsp oil for kneading
whole wheat flour (gehun ka atta) for rolling
4 tsp ghee for cooking

Method
For the dough

  1. Combine the wheat flour, 1 tsp of oil and salt in a bowl and knead into a soft, smooth dough using enough water. Cover with a wet muslin cloth and keep aside for 5 minutes.
  2. Knead again using the remaining ¼ tsp of oil till smooth and elastic. Keep aside.

How to proceed

  1. Divide the stuffing into 4 equal portions and keep aside.
  2. Divide the dough into 8 equal portions.
  3. Take 2 dough portions and roll out each into a 125 mm. (5”) diameter thin circle.
  4. Place a circle on a flat, dry surface and spread ¼th portion of the stuffing evenly on it.
  5. Place another circle over the stuffing and pinch the edges to seal the stuffing.
  6. Cook the paratha on a non-stick pan on a medium flame using 1 tsp of ghee till brown spots appear on both the sides.
  7. Repeat with the remaining dough portions and stuffing to make 3 more parathas.

How to pack

  1. Cool slightly, unmould and wrap in an aluminum foil or cling film or pack in a tiffin box.

I tried this recipe adding paneer into it and instead of chilli powder i have added ginger-green chilli paste and it gave me good taste. Kids gathered during holidays, loved it so much that they finished all the parathas in a jiffy...thanks for such recipe.
