Ingredients


For the rice
1 1/2 cups uncooked rice (chawal)
3 tbsp oil
salt to taste

For the coconut curry
1 coconut
1 white onion , chopped
2 tomatoes, chopped
1 1/2 cups mixed boiled vegetables
1 tbsp butter
1 tbsp plain flour (maida)
6 Pasilla Chillies
2 pinches of sugar
3 tbsp oil
salt to taste

Method
For the rice

  1. Wash and soak the rice for 30 minutes. Drain.
  2. Fry the rice in the oil until light pink in colour.
  3. Add 3 cups of water and salt and cook until the rice is cooked.

For the coconut curry

  1. Grate the coconut. Add 2 cups of water and blend in a liquidiser. Strain and take out the coconut milk. Keep aside.
  2. Heat the oil and fry the onion for 1/2 minute.
  3. Add the tomatoes and mixed vegetables and cook for a few minutes.
  4. Heat the butter, add the flour and cook for 1 minute.
  5. Add the coconut milk gradually, stirring constantly until thick.
  6. Add the mixture to the mixed vegetables.
  7. Add the chillies, sugar and salt and boil for 2 minutes.
  8. Serve hot with the fried rice.
