A delightful Spinach and rice blend in palak rice goes exceptionally well with a range of Indian spices. An easy and yet healthful chawal recipe, palak rice is one of our favorites.

Ingredients


10 big cauliflower pieces
1 capsicum, shredded
10 baby corn (parboiled)
10 french beans (parboiled), sliced
a pinch of M.S.G (optional)
2 tsp finely chopped ginger (adrak)
2 tsp finely chopped garlic (lehsun)
2 tsp finely chopped green chillies
1/2 teacup tomato puree
2 tsp cornflour
2 tbsp oil
salt to taste

Method

  1. 1. heat the oil in a wok or frying pan on a high flame. add the ginger, garlic and green chillies and stir fry over a high flame for a few seconds.
  2. 2. add the vegetables and ajinomoto and cook for a few minutes.
  3. 3. add the tomato puree.
  4. 4. mix the cornflour in 1/2 cup of water and add to the vegetables.
  5. 5. add the salt and cook for a few minutes. if you like, add a pinch of sugar.
  6. 6. serve hot.

This is a very easy recipe to make. I added more tomato puree so it will have a little bit of gravy when serving with rice. We all love it and I make it whenever the boys come home.
