Chilli Paneer and Baby Corn ( Microwave Recipes)

A microwave variation of the ever so popular chilli paneer. Cottage cheese and baby corn tossed in an oriental soya based sauce makes a delicious starter. You may even serve this with fried rice as a main course or wrap it up in a thin chapati to make a yummy wrap.

Ingredients


1 cup paneer (cottage cheese) (cottagte cheese) , cut into 25 mm. (1") cubes
1 cup baby corn cubes , cut into 25 mm. (1") pieces
1/3 cup chopped spring onions whites
1 tsp chopped celery
3 to 4 green chillies , finely chopped
1 tsp chopped garlic (lehsun)
1/2 tsp chopped ginger (adrak)
1/4 cup chopped capsicum
1 cup finely chopped spring onions with greens
1 tbsp oil

To Be Mixed Together Into A Soya Sauce Mixture
1 1/2 tsp soy sauce
2 tsp cornflour
1 tsp sugar
salt and to taste
1/4 cup water

Method
  1. Put the baby corn in a microwave safe bowl. Sprinkle a little water and microwave on high for 1 minute. Keep aside.
  2. In another microwave safe bowl, combine the oil, spring onion whites, celery, green chillies, garlic, ginger and capsicum and microwave on high for 2 minutes stirring once in between.
  3. Add the paneer, baby corn and the soya sauce mixture. Mix well and microwave on high for 1½ minutes stirring once in between.
  4. Remove from the microwave, add the spring onion greens and mix well.
  5. Serve hot.
