An interestingly unique vegetable dish, the Cherry tomatoes in tomato gravy make for a lovely side dish with any breads of choice. The small, plump and red hued cherry tomatoes are simmered in a tomato puree along with seasonings and served hot with chopped cilantro as garnish.

Cherry Tomatoes In Tomato Gravy recipe - How to make Cherry Tomatoes In Tomato Gravy

Preparation Time: 15 Min   Cooking Time: 10 Min   Total Time:     6

Ingredients

1 box of cherry tomatoes
1 big tomato
1/2 bunch of coriander (dhania)
2 tsp fresh grated coconut
2 tsp coriander-cumin seeds (dhania-jeera) powder
2 tsp chilli powder
2 tbsp peanuts
3 to 4 green chillies
ginger (adrak)
garlic (lehsun)
2 to 3 spring onions
1 carrot
Fresh Cream or Fat Free Sour Cream
Tempering:
2-3 tbsp Oil/butter
½ tsp Jheera
2 to 3 bayleaves (tejpatta)
1 stalk of curry leaves (kadi patta)
Method


  1. Prepare a dry mixture of dhalia, green chilies, and ginger. keep aside
  2. In a bowl mix the following ingredients:
  3. A.dry mixture of dahlia, green chilies, ginger.
  4. B.½ bunch of coriander
  5. C.2 tsp fresh grated coconut
  6. D.2 tsp dhana jheera powder
  7. E.2 tsp red chili powder
  8. F.1 tsp garam masala
  9. G.salt as desired
  10. Heat one tbsp oil.
  11. When hot add to the above mixture. the mixture should be dry and wetted only with oil.
  12. Cut the cherry tomatoes vertically…but don’t break them into 2 pieces.
  13. Slit them open and remove the pulp.
  14. Add that to the dry mixture.
  15. Cherry tomatoes normally have very little pulp.
  16. Start filling the cherry tomatoes with the above mixture.
  17. Leave the tomatoes in the mixture itself.
  18. Keep any leftover mixture with the tomatoes.
  19. Make the following gravy:
  20. A.1 big tomato
  21. B.green onions
  22. C.carrot
  23. D.garlic
  24. Heat the remaining oil…and add the ingredients mentioned under tempering
  25. When done…add the tomato gravy.
  26. When cooked (oil should start coming up)…add this to the cherry tomato mixture in a glass bowl.
  27. Mix properly, cover and cook in the microwave for 5 minutes.
  28. If you don’t have a microwave you can add the cherry tomatoes into the gravy on the gas and let cook…only be careful that the tomatoes don’t overcook and become very soggy.
  29. Add a spoon of cream and mix thoroughly.
  30. Microwave again for a minute.
  31. Serve hot and enjoy !!!!!
