Makes 4 servings

  1. Boil a full vessel of water, add the turmeric powder, salt and cauliflower florets and cook for 3 to 4 minutes.
  2. Drain and discard the water. Keep the cauliflower aside.
  3. Heat the oil in a wok, add the ginger-garlic paste, green chillies, chilli powder, dried fenugreek leaves and tomatoes and stir-fry for 2 minutes.
  4. Add the cauliflower, tomato purée, coriander and salt and stir-fry for 3 to 4 minutes.
  5. Serve immediately.

Well cooked crisp cauliflower subzi which is quick to make. I cut the oil content to make this healthy.
