Ingredients


2 cups cauliflower florets
1 onion, chopped
1 tbsp plain flour (maida)
1/2 cup milk
2 pinches of nutmeg (jaiphal) powder
2 tbsp butter
salt to taste

For the garnish
1/2 cup grated cheese
1/4 tsp nutmeg (jaiphal) powder

Method
  1. Put 4 cups of water in a saucepan and bring to a boil.
  2. Add 1 teaspoon of salt and the cauliflower and cook till it becomes soft.
  3. In another saucepan, heat the butter and saute the chopped onion till it turns transparent.
  4. Add the flour and cook till your get the smell of cooked flour, taking care to see that the flour does not discolour.
  5. Add the milk and whisk till no lumps remain.
  6. Add the cauliflower with the water, the nutmeg powder and salt and blend till smooth.
  7. Serve hot garnished with the grated cheese and nutmeg.

Tips
  1. If the soup is very thick, you can add more water to get the required consistency.
  2. Vegetable stock can be used instead of water to make this soup more nutritious.
