Cauliflower A-La-King on Toast

For the cauliflower mixture
450 gms cauliflower
2 onions
1 capsicum
4 green chillies
1/3 cup canned mushrooms (khumbh) (optional)
1 1/2 cups White Sauce
2 tbsp butter
2 tbsp grated processed cheese
salt to taste

For the toast cases
1 medium fresh bread loaf
a little butter

For baking
2 tbsp grated cooking cheese
chilli sauce to serve


    For the cauliflower mixture

    1. Cut the cauliflower into small pieces.
    2. Cook the cauliflower in salted water. Drain the cauliflower and keep aside the liquid.
    3. Chop the onions, capsicum and green chillies.
    4. Heat the butter in a vessel and fry the onions for a little while.
    5. Add the capsicum and cook again for 1 minute.
    6. Add the cauliflower, green chillies, mushrooms, white sauce, salt, cheese and 2 tablespoons of the cauliflower liquid.

    For the toast cases

    1. Remove the crust from the bread slices.
    2. Grease a muffin tray with butter.
    3. Press bread slices in each cavity.
    4. Apply very little butter on to and bake in a hot oven at 400°F for 10 minutes or until crisp.

    How to proceed

    1. When you want to serve, fill the bread cases with the hot cauliflower mixture.
    2. Sprinkle the remaining cheese on top and bake in a hot oven at 450°F for 10 minutes.
    3. Serve hot with chilli sauce.
