A cool and refreshing salad that you will love to have with lunch on a hot summer’s day. The carrot raisin salad is also a pleasure to behold, with vibrant orange coloured carrots and orange slices freckled with deep black raisins. Enjoy the splash of colours and flavours in this tangy salad.

Ingredients

1/4 cup raisins (kismis)
3/4 cup orange segments
1 1/2 cups grated carrot
1/4 cup mayonnaise
2 tbsp fresh cream
1/2 tsp lemon juice
1/2 tbsp powdered sugar
salt to taste

Method
  1. Put the raisins in a bowl and pour boiling water over them. Leave for 10 minutes and drain. Keep aside.
  2. Combine the mayonnaise, fresh cream, lemon juice, sugar and salt in a bowl and mix well. Keep aside.
  3. Combine the carrots, raisins and oranges in a deep bowl. Pour the mayonnaise mixture, mix well and refrigerate for 1 hour.
  4. Serve chilled.
