Carrot, Cucumber and Rajma Salad in Mint Dressing

Two vitamin a rich ingredients – carrot and mint, superbly blended to make up this light salad. Combined with protein rich rajma, this salad is an excellent nourishment for your eyes.

Ingredients

1 cup peeled and thinly sliced carrots
1 cup peeled and thinly sliced cucumber
1/2 cup soaked and boiled rajma (kidney beans)
1/2 cup sliced spring onions

To Be Mixed Into A Dressing
2 tbsp finely chopped mint leaves (phudina) leaves
4 tsp honey
1 tbsp lemon juice
salt to taste

Method
  1. Combine all the ingredients for the salad in a bowl and refrigerate till chill.
  2. Just before serving, add the dressing and toss well.
  3. Serve immediately.
