of milk and sugar for making milk jam.

Ingredients

Method

  1. In a glass bowl,mix together cornstarch, flour,soda and baking powder.
  2. Add butter, sugar and eggyolks,one by one,and mix well.
  3. In another bowl,mix well the vanilla essence and lemon rind and knead into the cornstarch mixture.
  4. Roll out the dough and make rounds with a cookie cutter.
  5. Place on a buttered bakingsheet and bake in an oven at a moderate heat.
  6. Cool.
  7. Spread the milkjam on one cookie and place another on top.
  8. Use up all the cookies this way.

Milkjam

  1. Bring the milk to boil.
  2. Add the sugar,vanilla and soda.
  3. Cook over a high heat,stirring continuously, till it turns a brownish colour and has a thick consistency.
  4. Remove from fire,set aside and leave to cool.
