Sliced French bread is topped with a freshly-made basil paste, chopped tomatoes, capsicum, zucchini, and cheese. These are baked till crisp, and served hot. Try using olive oil in the pesto for a lovely original Italian flavor.

Ingredients


8 slices, french bread
1/4 cup tomato cubes
1/2 cup red capsicum cubes
1/2 cup yellow capsicum cubes
1/4 cup cucumber cubes
1/4 cup mozzarella cheese, cubed
salt to taste

To be ground into a pesto paste
1/2 cup basil leaves
2 tbsp pinenuts (chilgoza)
2 cloves garlic
6 tbsp olive oil
salt to taste

Method
  1. Mix the tomatoes, red capsicum, yellow capsicum, zucchini, mozzarella cheese and salt in a bowl to make the topping mixture and keep aside.
  2. Spread the pesto paste on the French bread slices and place the topping on the slices.
  3. Grill in a pre-heated oven at 150°C (300°F) for 2 to 3 minutes.
  4. Serve hot.

Tips
  1. You can adjust the quantity of oilve oil in the pesto to get a spreading consistency.
