Vanilla ice-cream interlaced with cherries and grated chocolate is sandwiched between the chocolate sponge to make an interesting variation of the traditional black forest cake.

Ingredients


1 (50 mm.(6") diameter) chocolate sponge cake

To be mixed into a soaking syrup
2 tbsp sugar
2 tbsp rum (optional)
1/4 cup water

For the filling
500 ml vanilla ice-cream
1 small tin (450 grams) cherries, deseeded and chopped
1/2 cup grated chocolate

For the topping
1/2 cup whipped cream
dark Chocolate Curls
6 cherries

Method
  1. Slice the cake horizontally into 3 equal parts.
  2. Place the bottom layer on a serving plate and sprinkle with 1/3 the soaking syrup.
  3. Spread ½ the ice-cream on the soaked layer of the sponge.
  4. Top with half the chopped cherries and grated chocolate and place another layer of sponge.
  5. Sprinkle some more soaking syrup and then arrange the remaining ice-cream over this layer.
  6. Top with the remaining cherries and chocolate and then place the last layer of sponge.
  7. Sprinkle the remaining soaking syrup and spread the whipped cream evenly on the top and the sides.
  8. Garnish with the cherries and chocolate curls and freeze till the ice-cream is firm.
  9. Cut into wedges and serve immediately.
