These delicious Indian style banana nut pancake are enriched with bananas and milk and are perfect for breakfast and brunch. To make banana walnut pancake, combine all the ingredients in a deep bowl and mix well. Add ½ cup of water and whisk well till no lumps remain. Divide the batter into 6 equal portions. Heat a non-stick tava (griddle), pour a portion of the batter into a 100 mm (4") diameter thick circle. Put ½ tsp butter on the edges and cook each pancake on a medium flame till they turn golden brown in colour on both the sides. Serve immediately with bananas and drizzled with honey.

Method for banana walnut pancake

  1. To make banana walnut pancake | Indian style eggless banana walnut pancake | in a deep glass bowl out 1/4 cup mashed banana. Natural sweetness in the recipe will come from mashed bananas and you can use less castor sugar later in the recipe if you wish.
  2. Add 1/2 cup finely chopped walnuts. They provide a nice crunch to the pancakes asides from being healthy.
  3. Add 1 cup whole wheat flour. This is a healthier Indian style eggless banana walnut pancake to give your family as plain flour is substituted with whole wheat flour. 
  4. Add 1/2 cup milk.
  5. Add 3 tablespoons castor sugar. Note that the amount of sugar depends on how sweet you like your pancake. After making it several times, i started usinig only 1 teaspoon of castor sugar. We already have mashed bananas in the recipe for sweetness. The fine grind of castor sugar makes it ideal for many baking projects, since it dissolves easily and creams readily. Hence we have used it for making pancakes. Castor sugar is easily available in India.
  6. Add 1/2 teaspoon vanilla essence.
  7. Add 1/2 teaspoon baking powder. This is essential to make the eggless banana pancake rise. 
  8. Add 1 tablespoon melted butter.
  9. Combine all the ingredients and mix well.
  10. Add ½ cup of water.
  11. Whisk well till no lumps remain. The batter looks a bit lumpy because you see the cashew nuts in the batter.
