Just the right and tasty way to use over ripe bananas. These pancakes make a wonderful variation of the traditional south indian 'kai appams'. You may use whole wheat flour instead of plain flour for a healthy variation.

Ingredients

1 banana , mashed
4 tbsp plain flour (maida)
3 tbsp grated jaggery (gur)
a pinch baking soda (soda bi-carb)
a pinch cinnamon (dalchini) powder
oil for cooking

For The Topping
2 tbsp grated coconut
2 tbsp sesame seeds (til) , roasted

To Serve
honey or

Method
  1. In a bowl, add the banana, flour, jaggery, baking soda and cardamom and mix well.
  2. Add approx. 2 tablespoons water to get a batter with a coating consistency.
  3. Heat a 125 mm. (5") diameter non-stick pan and spoon the batter on the pan to make a 100 mm. (4") diameter pancake.
  4. Top with the coconut and sesame mixture and cook the pancake, using a little oil, on both sides till golden brown in colour.
  5. Repeat to make 3 more pancakes.
  6. Serve hot with honey or vanilla ice-cream.
