Almond Jelly With Fruit Cocktail

Makes 8 servings


Ingredients

3 3/4 cups milk
18 tsp sugar
15 tsp agar-agar , cut into small pieces
1 tsp vanilla essence
2 to 3 drops almond essence
2 tbsp blanched and almonds (badam)
1 small can (450 grams) lychees
1 small can (450 grams) pineapple tidbits
225 gms seedless grapes

Method
  1. Mix the fruits and chill.
  2. Boil the milk with the sugar.
  3. Mix the china grass in 1 1/4 teacups of cold water and boil on a slow flame until it dissolves completely.
  4. Add the china grass mixture to the boiling milk and boil for a further 4 minutes.
  5. Strain the mixture.
  6. Add the vanilla and almond essence.
  7. Put to set in a flat dish in the freezer compartment of a refrigerator.
  8. When set, cut into small squares and add to the fruits.
  9. Top with blanched almond slices and serve cold.
